Slow Cooker BBQ Pulled Pork with Show-Me® Classic

This is the pulled pork to make when you want barbecue for a crowd but cannot tend a smoker all day. Show-Me® Bar-B-Q Rub seasons the pork shoulder, the slow cooker does the work, and Show-Me® Classic Bar-B-Q Sauce, thick, sweet and smoky, ties it all together. Pile it on buns with coleslaw, or freeze some for later.

Ingredients

  • 4 to 5 lb boneless pork shoulder (Boston butt)
  • 3 tablespoons Show-Me® Bar-B-Q Rub
  • 1 large sweet onion, sliced
  • 1/2 cup apple cider vinegar or apple juice
  • 1 1/2 cups Show-Me® Classic Bar-B-Q Sauce, plus more for serving
  • Buns and coleslaw, for serving

Instructions

  1. Trim any thick pieces of surface fat from the pork and cut it into 2 or 3 large chunks. Season all over with the Bar-B-Q Rub.
  2. Spread the onion over the bottom of the slow cooker, set the pork on top and pour in the vinegar or juice.
  3. Cover and cook on low for 8 to 10 hours, or on high for 5 to 6 hours, until the pork shreds easily with a fork.
  4. Move the pork to a large bowl and shred it with two forks, discarding any large pieces of fat.
  5. Skim the fat from the cooking liquid. Toss the pork with 1 cup of the BBQ sauce and 1/4 to 1/2 cup of the cooking liquid, until it is as saucy as you like.
  6. Serve on buns with coleslaw and extra sauce on the side.

Tips

  • For a little heat, use Show-Me® 'Some Heat' Bar-B-Q Sauce, or serve both side by side.
  • Feeding a big crowd? Classic also comes in half-gallon and gallon jugs.
  • Pulled pork freezes well for up to 3 months. Freeze it with a little of the cooking liquid to keep it moist.
